Veggie Turkey Wraps

Wraps can be a great quick and healthy lunch or dinner. You just have to check the nutrition facts on your tortillas and dressings. There are tons of options out there and with a little effort you can find ones that are much healthier options for you! This wrap is also a great way to get more veggies in your diet and use up some of that amazing produce that is starting to be ready in your garden! And the best part about this meal, it comes together in 10 minutes or less and you have a delicious and filling meal.

Veggie Turkey Wraps
6 servings

1/2 green bell pepper cut into strips
1/2 red bell pepper cut into strips
1 medium zucchini or summer squash cut into 1/4 inch thick slices
1 small red onion cut into thin strips
1 tomato diced
3 10-inch spinach or whole grain tortillas
3 T salad dressing of choice
6 ounces thinly sliced cooked turkey breast
2 ounces reduced fat Monterrey Jack or Pepper Jack cheese grated
1/4 cup fresh cilantro

Spread dressing on one side of each tortilla. Divide turkey among tortillas and top with cheese. Spread veggies over cheese just below center of tortilla. Top with cilantro. Fold bottom third of each tortilla partially over veggies. Fold in sides of tortilla and roll up. Cut in half.

For another yummy variation you could also saute your veggies in a frying pan or cook them in a grill basket over your grill to add some amazing flavor!

Farmers Market Fave from The Titanium Chef

I absolutely love farmers markets.  I don't have a yard to have a garden and my attempt at a potted garden failed miserably!  So I love going to farmers markets because I can still get that great straight from the garden produce that you can't get from the grocery store.  Here is a great recipe to use with those farmers market finds.

Fresh Tomato Flatbread Pizza
Prep Time: 15 minutes
Start to Finish: 30 minutes
Makes: 2 servings

2 oval whole wheat flatbread wraps or whole wheat tortillas
2 tsp olive oil
1 medium onion, sliced thinly
2 cloves garlic, finely chopped
1 cup sliced fresh mushrooms
1 T balsalmic vinegar
2 Roma tomatoes, thinly sliced
2 oz goat cheese
1/4 cup shredded fresh basil leaves

Heat oven to 350.  Place wraps on greased cookie sheet, bake for 7 minutes.  Meanwhile in a non-stick skillet, heat oil over medium heat.  Add onion and garlic, cook 2-3 minutes stirring frequently until tender.  Stir in mushrooms and vinegar.  Cook 2-4 minutes stirring frequently until tender and liquid is absorbed.  Top each wrap with mushroom mixture and tomatoes.  Drop small pieces of goat cheese over pizza.  Bake 10-15 minutes until cheese is melted.  Sprinkle with basil and enjoy.

Oriental Chicken Wraps-from the Titanium Chef

I don't know about everyone else out there but I hate trying to figure out what to take to work for lunch every single day.  I don't like to eat out much because that gets pricey and its hard to find healthy fast foods.  So I have started making a big batch of something on Sunday and then having it for lunches the entire week.  I have great healthy food to take with me everyday now!  Try this recipe out, you can alter it with any veggies that you like, its delicious, fast and fresh!

Oriental Chicken Wraps

1 chicken breast, grilled, and shredded
2 carrots, shredded
1 package bean sprouts
1 cucumber, thinly sliced
1 cup prewashed spinach, packed
4 flour tortillas (I love the uncooked ones from Costco)
Sriracha Chili Sauce (optional)
2-3 T reduced sodium soy sauce
1 T honey

You can either keep the veggies fresh and uncooked to put in the wraps or you can cook up some of them.  In a hot skillet, toss the shredded chicken, carrots and bean sprouts.  Add a few tablespoons of soy sauce, a little chili sauce and the honey.  Stir and cook over medium high heat until the veggies are soft and everything is warm.

Lay tortillas flat and put 1/4 of the chicken mixture in the center.  Top with a good handfull of spinach, some sliced cucumbers and tuck in the ends.  Roll up the tortilla and enjoy!
