Skinny Monkey Oats Cookies

Serving size: 3 cookies.
3 whole bananas
2 cups old fashioned oats
2 Tbsp reduced-fat creamy peanut butter
¼ cup dark chocolate chips
⅓ cup natural apple sauce
1 Tbsp brown sugar
1 tsp vanilla
- Preheat oven to 350 degrees. Line 2 cookie sheets with parchment or lightly spray them with nonstick cooking spray.
- In a medium size bowl, mash bananas with a fork. Stir in remaining ingredients.
- Let batter stand for 15-20 minutes (this helps soften up the oats and will give the cookie a nice chew).
- Using a teaspoon to scoop, drop batter onto cookie sheet.
- Bake for 10 minutes.
